How to Peel Awkward Vegetables

How to peel awkward vegetables - like this celery root.
  1. Cut off both ends, so you have a flat surface to put down on your cutting board. Don't try to cut anything that's rolling around under your knife.
  2. Starting at the top, work your knife down and around the curve of the root, as you remove a strip of skin.
  3. Turn the root and repeat, until the whole vegetable is peeled.
